Insanity

Still can't believe its only Tuesday....how many more days till the weekend?Here's some eats & sweats for the day:
Spinach, cauliflower, carrots & sunflowers. A microwaved sweet potato on the side!

Then it was off to Cincinnati for a mid-afternoon interview at WCPO, a local broadcasting station, for a summer internship. keeping fingers crossed (:

Workout:
The Max Cardio Interval Training..kicked my butt.

This gray weather is making me kinda depressed. Eek.
Right now, I'm really craving a hot shower, cuddling & reading. Maybe throw in some candles and incents. So off to do that.

Skateboard Sunset

Yes! I survived Monday. I defeat with in itself. After a good therapy session, a Subway lunch date with mom, a nice sweat sesh at Lifetime and getting homework done..(is it weird that I could spend hours reading my psychology textbook??) I helped prepare din din for the night!

Lightened Up Lemon Parmesan Fusilli
[adapted from from Claire's site]
  • 10oz (3/4 box) whole grain pasta
  • ~ 2 cups broccoli florets
  • 1 pint cherry tomatoes, halved
  • 1 Tbsp olive oil
  • 1/3 cup low fat cottage cheese
  • 1/2 cup plain Chobani 0% greek yogurt
  • 1 tsp minced garlic
  • 1/4 cup freshly grated parmesan cheese
  • 1-2 tsp lemon juice

  1. Prepare pasta according to package directions / Pre-heat oven to 400 degrees
  2. Toss broccoli florets and tomatoes in olive oil. Season with salt and pepper as desired.
  3. Spread in single layer on foil lined baking sheet & roast 20-25 minutes, until tomatoes start to wilt and broccoli is tender.
  4. While vegetables are cooking, combine cottage cheese, yogurt, and garlic in a blender or Magic Bullet. Stir in parmesan.
  5. Toss pasta with “sauce”, then stir in vegetables. Add in lemon juice and greens!
  6. Yum

How do you make Mondays Fundays?? Cooking up a good meal to end the day is always a fun way. Simple & relaxing.

 I'm spending the rest of the night reading, listening to Vampire Weekend, preparing for an interview with WCPO tomorrow for an internship this summer and watching the lil bro skate. Nice end to the day!

    Overnite Oats

    So I stuck with my promise! New week, new foods! I tried overnight oats for the first time today! And I'm asking myself, why hand't I done this earlier?! Super yummy, and suuuper filling. Lasted me the long stretch from morning breakfast (6:20) to lunch time (12:30)! Winner (picture does NOT do this dish justice!)

    Apple Butter Overnite Oats
    -1/2 cup oats
    -1/2 cup soymilk
    -spoonful of apple butter
    -stevia
    -apple
    -cinnamon
    Directions:
    1.Mix oats, milk, stevia & apple butter in a bowl
    2.Refridgerate over night
    3.Microwave 2 minutes
    4.Slice pieces of apple and stir in, sprinkle in cinnamon
    5.Enjoy!

    Breaking Rountine

    This was definatly one of those weekends that felt a million years long. From OSU campus visits, to interviewing a Mr. Oh, an amazing Korean chemist, for a Multicultural project, to gym classes, long car rides & concerts-I was on the go-go-go. So today was a nice de-compress Sunday to get back into the swing of things again (that's what Sunday's are for right?)


    Woke up and made a nice bowl of homemade oats! Chopped up some apples, sprinkled a lil brown sugar and breakfast is served! Paired with a cup of soy milk, coffee & water on the side! Stayed around doing some chores and laundry..then I was itching to get to the gym! My body hasn't been sore this weekend, which is good. But sometimes, having that soreness is a nice reminder that you went hard! Does anyone else get in 'work-out ruts'? I've been doing Insanity, running & taking gym classes like Strike and Cycling. I think my body is telling me I'm doing too much. So I'm planning on cutting back. I guess with the spring time weather, I naturally want to move more. Knowing that I've struggled with body weight and excercising & eating enough to maintain weight..it's something I have to be careful of.

    I know that stress, big decisions, loneliness, swimsuit season & spring air always send me wanting to run a little more and eat a little less. So I'm trying to be extra observant of what sets me off and keeping it in line.

    Workout
    Headed to the gym for a light elliptical warm-up for 15 mins. then took a Strike class. Strike is a combination of cardio kickboxing and using the body bar for strength training and cardio. Its fun and the hour goes by faast. I typically do Strike once a week.

    Lunch
    -Tortilla Tuna Wrap with Laughing Cow cheese
    -spinach & cabbage salad w/ balsamic dressing
    paired it with this:
     Funky Monkey Smoothie:
    -1 pack of Chocolate CIB
    -1/2 a banana
    -crushed ice
    Worked on homework, ran a few errands and took Bonds for a walk!
    The other day Bonds injured himself. We tried putting a gauze around his paw but it made him so sad & depressed. Aww...:(

    Dinner
    The perfect weather called for some grillin' & back porch munching!

    We enjoyed grilled chicken sauteed in garlic (somewhat of a Korean flavor), quinoa, and roasted cauliflower. Mmm mmm good!

    Breaking Routine
    I'm very much so a creature of habit when it comes to eats & work outs. I think I've eaten turkey sandwiches for lunches for far too long. And I'm getting bored! If I'm going to eat it why not make it delicious and exciting?

    So my new promise to myself is to treat myself better. Nourish my body with wholesome foods that excite me. I feel as if my ED is partly to blame for my lack of adventure in the food area. I have my "safe" foods: like turkey sandwiches on 100 calorie breads, salads, light yogurts....These are things I've tried to nix out of my diet purely because I know they are my ED thoughts telling me to get them. Now I don't rely solely on lettuce leaves and 100 cal packs to satisfy my body. I'm more into the whole foods, clean eating. But I still stick to my comfort zones.

    So I'm breaking my habits. Starting today.
    Typicalling for breakfasts, I'll make an english muffin with some greek yogurt. Tomorrow? Overnight Apple butter oats! Recipe to come (;

    Woke up from a blissful, psychedelic dream.
    Blissful and content with the beauty and sounds that surrond.
    Last night, 3 girlfriends & I headed out in the downpour and made our way up to Wright State in Dayton for Mac Miller <3
    Can I just say how I have the biggest crush on Mac.
    Silly guys always get me.

    His performance was beyond amazing! Flashing lights, colorful dayglows, vibrating bass..everything a concert is supposed to be.
